PUMPKIN CHOCOLATE CHIP !!
I’ve been baking these cookies for about a year now and they are hands down my favorite cookie - I may be biased.
But then again there are others that agree.
There was a time last year when I was probably making them every weekend. Even pushed Zakhary to the point of needing a break from them. And not because he was sick of them, but we were consuming an unhealthy amount of pumpkin chocolate chip cookies. And he always says if they’re in the house, he can’t resist.
I apologize for your new addiction - here they are :
Ingredients
1 stick (1/2 cup) of UNSALTED butter
1 cup brown sugar
1/4 cup white sugar
1 tsp vanilla
1/2 cup of pumpkin purée
1/2 tsp salt
1/2 tsp baking soda
1/2 tsp (hefty scoop) cinnamon
1/4 tsp ginger
1/4 tsp cloves
1/4 tsp nutmeg
1/4 tsp all spice
1 1/2 cup all purpose flour
1 cup chocolate chips (MILK chocolate)
Directions
Preheat oven to 350 degrees
Combine butter + sugars until well mixed
Add vanilla and pumpkin to mixture - mix until smooth
In a separate bowl, mix all dry ingredients
Add dry ingredients to wet mixture and stir just until combined
Stir in chocolate chips
Make dough into rounded balls and set on greased cookie sheet
Bake for 6 minutes
Take cookies out and press them so they are flat (I use the bottom of a greased wine glass)
Put cookies back in oven and bake for another 5-6 minutes (until tops are golden brown)
Cool slightly before removing from pan
** Baking time will depend on if you like more crunchy or chewy cookies - I like mine more chewy :-)**
